WHITE CHOCOLATE AND COCONUT FUDGE



What you need:

- 300g white chocolate, chopped
- 395g can of sweetened condensed milk
- 170g block Kit Kat White
- 1/2 cup dried apricots, finely chopped
- 1/3 cup shredded coconut
- Extra 2 tablespoons shredded coconut, to sprinkle on top


What to do:

1. Lightly grease a 20cm square cake pan. Line base and sides with baking paper, extending paper 2cm above all four edges of the pan.

2. Ask an adult to help you place the chocolate and condensed milk in a medium saucepan over a medium-low heat. Cook, stirring constantly, for about 5 minutes or until smooth. Remove from heat. Transfer to a large heatproof bowl.

3. Break the block of Kit Kat into pieces. Place in a large snap lock bag and seal shut. Using a rolling pin, gently pound until crushed.

4. Add the Kit Kat pieces, apricots and coconut to the warm chocolate mixture. Stir to combine. Pour into prepared pan from Step 1. Smooth over top. Sprinkle with extra coconut. Refrigerate for about 2 hours or overnight, until the mixture is firm.

5. Lift fudge from pan. Cut into long bars or squares.
